Shipping Policy

Any customers with separate shipping and billing addresses are subject to follow up contact. If no contact can be made, your order will be cancelled. Please understand that this policy is to protect our customers from fraud and theft.

Shipping costs are calculated automatically when you checkout. Orders to P.O. Boxes or military addresses require shipping via USPS.

Orders placed by 3:00pm EST will be shipped the same day. All orders shipped USPS (including Express) may take an additional business day to process and ship. We strongly recommend shipping UPS if you need guaranteed delivery by a certain date.

For our international customers, you must call or email after ordering to arrange for duties/customs and declarations before we will ship your order. USPS Express International shipments with declarations greater than $200, incur an additional $15.00 fee for postage/insurance.

Overview

An all-purpose knife suitable for preparing meat, vegetables, and fish, the Bunka Bocho literally means "cultural knife" because of its role in making traditional Japanese cuisine in the home. Closely related to the Santoku ("three virtues") knife, the Bunka Bocho has a more acute and utilitarian point.

Literally meaning "in front of the cutting board," Itamae is an extremely prestigious title reserved for highly skilled sushi chefs. Consistent with that elite status, the Murray Carter Collection's Itamae Series -- the highest tier in the Collection -- proudly features premium materials and uncompromising craftsmanship.

The blades of Itamae Series knives are expertly crafted from laminated steel consisting of an Aogami Super Blue core clad between layers of SUS410 stainless steel. The classic three-layer construction allows the outer layers to protect and support the ultra-hard carbon-steel center layer that forms the blade's edge. Ground exceptionally thin and straight for unparalleled cutting performance, the blades also feature Murray Carter's signature "Carter Elbow" -- a distinctive taper from the spine to the point that reinforces the blade's tip.

The elite blades of the Itamae Series are paired with traditional "wa-style"(octagonal) handles made from stunning burl G-10 and highlighted with black G-10 ferrules. Murray Carter is a 17th generation Yoshimoto bladesmith and ABS Master Bladesmith. Growing up in Eastern Canada, Murray enjoyed outdoor activities which gave him plenty of chances to use a diversity of blades. His disappointment with the blades he was exposed to gave him the desire to make something better. Shortly after graduating from high school, he traveled to Japan where his interest in blades led him to a Japanese bladesmith's shop. In no time at all, Murray was engaged in an apprenticeship under the tutelage of a 16th generation Yoshimoto bladesmith. Upon completing his apprenticeship, he was asked to take the position of number seventeen in the Sakemoto family tradition of Yoshimoto Bladesmithing. After eighteen years of bladesmithing in Japan, Murray and his family moved to Oregon. Murray has forged and completed over 25,000 knives, all of which were faithfully crafted using the traditional techniques from Japan.
