Overview
The Fruit Knife or Melon Knife is a classic slip joint pattern with a long, slender spear point blade used for cutting samples from fruit (and sometimes meat) for quality inspection. Due to the nature of use materials that were resistant to corrosion and antimicrobial or easy to clean were chosen. The #89 from Great Eastern Cutlery exhibits their high quality fit and finish and comes with stylish grooved bolsters and a polished stainless steel blade. This version comes with stabilized antique chestnut wood covers and a 420HC stainless steel blade.
Blades: Polished 420HC stainless steel comes in a flat ground spear point profile that tapers from a slim 3/8" at the tang to a fine point for good piercing and an easy turn in soft materials. The blade is etched "Stainless Fruit Knife" in a calligraphy script and opens via a classic nail nick.
Handle: Stabilized antique chestnut wood covers offer a timeless, handsome look with a warm feel in the hand and thanks to the stabilized construction are durable and weather resistant. The covers are flush fit between two polished and grooved nickel silver bolsters riding on brass liners with a classic pinned construction. A polished propeller shield completes the construction.
Each knife ships rolled in wax paper inside a shipping tube with company information on the front.
420HC Stainless Steel: 420HC is a stainless steel that provides excellent rust resistance, ease of re-sharpening and moderate edge retention while being exceptionally tough for a stainless steel. With proper heat treat it is said to preform similarly to VG-10 in wear resistance.
