Overview
Zubeng knives are handmade by Master Rich Chen (Zubeng), who forges Tamahagane steel using the traditional methods of Japanese swordsmiths. The smelting, folding, forging, heat treating, and hand-polishing of the steel is a long and difficult process. This produces a blade that is extremely sharp and incredibly durable. Master Chen makes and uses this Tamahagane steel for all his swords and knives.This kitchen knife features an extremely sharp Tamahagane blade that is ground on both sides and a maple burl handle. The blade has been differentially heat treated by hand for a hard cutting edge and softer spine, and has a visible hamon. The blade is epoxied to the ferrule very cleanly, and the overall finish work is excellent. Great feel in the hand. Includes a wood sheath that fits snugly over the blade. Outstanding work.
